Have you looked at Julius Lester's versions,
illustrated by Jerry Pinkney? There is Uncle Remus:
the complete tales and a smaller collection, The tales
of Uncle Remus: the adventures of Brer Rabbit. I know
these are available from Follett Library Resources.
