I once had students create an authentic box lunch from the time using shoe boxes which had to be decorated on the outside with a scene from the novel. The lunch contents had to be as authentic to the period as possible: no wax paper, plastic, processed foods, soda, etc. They had to do a little research about what choices they could have. How about making rafts out of popsicle sticks, or pre-cut dowels, and some type of waterproof glue. If the students have time you could lash the rafts together with string. Many Boy Scout or outdoors sites will have how-tos on the lashing. With a little preparation anyone can learn the basics--at least enough to build small demo rafts.
An added activity would to fill something with water and see how the rafts float.
