I couldn't think of much with your pre-approved snack list, but I think these would be pretty healthy & easy to prep:
The Cheese, Palatini
The Popcorn Dragon, Thayer
Stop That Pickle, Armour
Mr. Putter & Tabby Pick the Pears, Rylant
The Little Mouse, The Red Ripe Strawberry and The Big Hungry Bear, Wood
Bread and jam for Francis, Hoban
The giant jam sandwich, Lord
If you give a moose a muffin, Numeroff

Our school will be having a fun activity called "Eat-A-Book". Students will get to hear a story and then have a snack that ties in somehow. We have a pretty strict wellness policy that limits the snacks we can serve. I'm trying to come up with books that match the list of pre-approved snacks. Can you think of any picture books that would match the following foods?
Pretzels
Licorice
Pudding
Angel food cake
